Brown Butter Pumpkin Bread

“Why did my cupcakes sink in the middle?”
Almost always one of three things. The batter was overbeaten after the flour went in, which builds air pockets that collapse; the oven door opened before the structure set (stay out until 2–3 minutes before the timer); or there is too much leavening — more baking powder makes cupcakes rise faster than their crumb can carry, then fall. Check the recipe against 1 tsp baking powder per 125 g of flour, mix only until the flour disappears, and trust the oven light over the oven door.
That’s the house style: the why first, then the fix. Members send us anything that went wrong — we answer every question.
